Cheese Sambousak

Sambousak is a delicious bite, a most popular side dish served at Ramadan tables and everyday!  Here it is presented with Uffa’s special vegetarian filling.

2 litres milk

113ml white vinegar

2  Bunches of spring onions

500g mozzarella cheese

 1 tsp salt

 1 tsp pepper

 1 tsp mint

 3 tbsp olive oil

 1 packet of filo pastry

250 ml vegetable oil

  1. Bring milk to boil in a saucepan, add vinegar and stir it until the milk reduces, then push it through muslin to create fresh cheese.
  2. chop spring onions into small pieces and put them on top of the strained milk, add mozzarella cheese, olive oil, salt, mint and pepper, stir well until all ingredients are mixed together.
  3. Cut the filo pastry into long rectangular sections. Place a teaspoon of the cheese mixture on the edge of each pastry rectangle, then roll the dough over the filling several times to form a triangle. Repeat this for each piece until all of the pastry and filling is used.
  4. Put vegetable oil in a frying pan, put it over a fire until the oil is hot, then fry your sambusak in it until it turns brown.
Uffa puts the filling in to make the pastry parcels. She uses filo pastry already cut to size. You can get this from Pakistani grocery stores. Or you can buy filo from a supermarket and cut it into strips.
